Lyophilization, or freeze drying, is a dehydration process in which water is removed from a product after it is frozen and placed in a vacuum environment. This allows ice to transition directly from a solid state to vapor without passing through a liquid phase, and consists of three distinct, interconnected stages: freezing, primary drying (sublimation), and secondary drying (desorption).
