Post freeze-drying, products can be easily preserved for extended periods; once rehydrated, they revert to their original state while maintaining inherent chemical and biological characteristics. Also known as sublimation drying, vacuum freeze-drying is a specialized technique that first freezes samples, then sublimates their moisture under vacuum conditions.
